Hawaiian B.B.Q. Sauce**

Makes anything taste ono!

makes 2 cups


3/4 cup unsweetened pineapple juice
1/2 cup peanut oil or vegetable oil

Combine all ingredients, stirring well.
Use sauce to baste chicken, lamb, beef or pork when grilling

This chicken comes out soooooooooooo juicy! I even make it on the George sometimes and it's yummy!

The Ultimate Barbecued Chicken by Tyler Florence


Ingredients

Brine:

2 tablespoons kosher salt

2 garlic cloves, smashed with the side of a large knife
4 sprigs fresh thyme
6 chicken legs and thighs, still connected, bone in, skin on, about 10 ounces each

The Ultimate Barbecue Sauce:



1 slice bacon
1 bunch fresh thyme
Extra-virgin olive oil
1/2 onion, chopped
2 garlic cloves, chopped
2 cups ketchup
1/4 cup brown sugar
1/4 cup molasses
2 tablespoons red or white wine vinegar

1 teaspoon paprika or smoked paprika if available
Freshly ground black pepper

Directions

For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (if you've only got 15 minutes, that's fine) to allow the salt and seasonings to penetrate the chicken.
Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme and cook slowly 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly without coloring for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving along side the chicken at the table. The rest of the barbecue sauce will be used for basing the legs.
Preheat oven 375 degrees F.
Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry on paper towels. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce.

This is my favourite pork recipe! I haven't made it in a while but I think we just might be having it this week! :thumb: I haven't got a clue where I found the recipe so I can't give credit where it's due... :blush:

Some changes I made to the recipe: I don't add the mint to the salsa (I'm not a fan and neither is my DH) and I don't use the jalapeno (DH doesn't like spicy foods). Even with the mint and jalapeno omitted the recipe is fantastic!

Marinated Pork Chops with Cilantro

Ingredients:
4 pork loin or rib chops, about 3/4 inch thick (about 1-1/4 pounds)
1 tbsp olive or vegetable oil
1 tbsp lime juice
1/2 tsp chile powder
1 clove garlic, crushed
Salt and pepper
Cilantro-Mint Salsa

CILANTRO-MINT SALSA
1 cup chopped seeded tomato (about 1 large)
1 tbsp chopped fresh cilantro leaves
1 tbsp chopped fresh or 1 tsp dried mint leaves
1 tbsp chopped onion
1/2 tsp lime juice
1 jalapeno chile, seeded and finely chopped

Directions:

To grill pork chops, cover and grill them 5 to 6 inches from medium coals for 25 to 35 minutes, turning 3 or 4 times until done. Although fresh herbs have more flavor, dried herbs are an acceptable substitute here. However, cilantro (the leaves of fresh coriander, also known as Chinese parsley), is an exception. The dried version is lacking in that fresh bite that only fresh cilantro can add to a dish, so we cannot recommend using dried cilantro in this dish, or any other.

Trim fat from pork chops. Place pork in glass or plastic dish. Mix oil, lime juice, chile powder and garlic; rub into both sides of pork, using back of spoon. Cover and refrigerate at least 1 hour but no longer than 24 hours. Prepare Cilantro-Mint Salsa.

Set oven control to broil. Sprinkle pork with salt and pepper. Place pork on rack in broiler pan. Broil with tops 3 to 5 inches from heat 8 to 11 minutes, turning once, for medium doneness (160 degrees). Serve with salsa. 4 servings

CILANTRO-MINT SALSA

Mix all ingredients in glass or plastic bowl. Cover and let stand at least 1 hour before serving.

If you like cilantro, this recipe is awesome! :twothumbs: Just cook the pork low and slow so it comes out nice and tender. Mmmmmmmm.........

My BBQ Chicken Recipe

I boil the chicken in chicken broth over the stove first till it is done.
Then remove it from the stove drain it then cover the chicken in BBQ sauce any kind that is your fave. Then put it on the grill for about 20min. It is really yummy and tender.

And the broth I take it and make homemade noodles! YUM

I know nothing about Barbeque as that is Dh's forte, but I will save these recipes and let him try them! I'm going to post my potato salad recipe. Simple, easy, and always a crowd pleaser.

Heather's Potato Salad:
1) Peel and cube potatoes (about 5 or 6 for 4 servings)
2) Boil potatoes in water with an egg for approx. 10 minutes or until they fall apart easily when cut w/ a fork.
3) While potatoes are boiling, chop up about a half cup of onion and a pickle or two (dill please, sweet pickles are nast).
4) Once potatoes are done, drain and run cold water over them until they are cool.
5) Finely chop hard-boiled egg.
6) Combine potatoes, onions, egg, and pickles in a bowl.
7) Add about 1 cup of mayo and 3/4 cup of mustard. (I eye this, so I really have no idea if this is correct. Feel free to add more if it's dry.)
8) Mix well, add salt and pepper, and top w/ Paprika. Voila!

I'm the worst cook ever, but this looks good & easy!! The recipe is for 12 servings (it's a slowcooker recipe)

INGREDIENTS



3 pounds chuck roast or round steak
1 small onion, thinly sliced
1 cup Bob EvansŪ Wildfire BBQ Sauce
1/2 cup apricot preserves
2 tablespoons Dijon mustard
12 rolls or buns

Directions


Place beef and onion into slow cooker. Combine Wildfire sauce, preserves and mustard and pour into slow cooker. Cover and heat on low for 8 to 10 hours or until meat is tender. Remove meat and shred with 2 forks. Combine shredded meat with sauce and serve on buns.
