I'm making a cake tonight (yup, I'm pregnant and hungry) and I need a good icing recipe. I'm not going to the store to buy canned crap. I want the real deal.

I like the recipe on the back of the Domino Powdered Sugar Box....BUT I use (GASP) margarine instead of butter. :hehe: My mom always made it that way and I think it tastes better. :idontknow:

Vanilla Icing

3 ¾ cups icing sugar
½ cup soft real butter
3 tbsp milk
2 tsp white vanilla

Beat sugar with butter ‘til well blended; add milk & blend,
Add vanilla and beat ‘til smooth and fluffy.

I can eat this stuff straight from the bowl, no cake required. :twothumbs:

This is the one I use most often. You can add stuff to change flavors. The shortening sounds - and looks -- like a heart attack but it's delish!



1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter or margarine softened
1 teaspoon clear vanilla extract (http://www.wilton.com/store/site/product.cfm?sku=604-2237)
4 cups sifted confectioners' sugar (approximately 1 lb.)
2 tablespoons milk

Honestly, it makes enough frosting for a cake or cookies. Sometimes there's leftover but everyone loves it (then I tell 'em how to make it).

BTW - comes from the Wilton web site.

Uggh, Im getting a hankering now. Sheesh.

*wonders how many people will have to make a cake now because of this thread*

My cake is in the oven now (7:30) guessing it won't be cooled in time to have a piece before bed (and to ice it). I might have to stay up.

Just thought I'd add that frosting freezes well if you have extra. I always do, and I always freeze it. (I too love to eat it plain and sometimes do!)
