Everyone's got them...and while some aren't willing to give them up, I figured I'd share a MAJORLY easy, yet elegant dish that my little one would eat forever if I'd let her:
Clam Sauce Spaghetti
You Need:
5 tbsp EVOO
5 cans of minced or diced clams, with juice (do not drain)
1 heaping tbsp Oregano
1 heaping tbsp Basil
1 heaping tbsp Parsley
scant 1/4 tsp salt
scant 1/4 tsp pepper
1 minced garlic clove
spaghetti noodles
Empty the 5 tbsp of olive oil into a medium pot. Heat on medium, and add the minced garlic. Sautee' slowly for about 5 minutes, or until golden brown. Next, add the 5 cans of clams and the juice from each can. Stir in the dry ingredients (S&P, oregano, basil, and parsley). Cook on medium heat, stirring occasionally for approximately 45 minutes, or until the juice barely covers the top of the clams. Boil pasta and drain (don't rinse), and then return pasta to pot and toss with the clam mixture. You CAN'T BEAT IT!!!
Does anyone else have any family recipes to share? I'm going to get out my great-grammy's Pennsylvania Dutch cookbook and post some more later!! :hula:

I'm assuming you're Italian? We use that same "recipe" Except we don't use basil or oregano and instead use hot pepper flakes.

This is a sinfully good dessert from my great-grandma. I can't make it nearly as well as my mom (who doesn't need a recipe - I forced her to measure everything while she made it so I could have the recipe) but even someone like me who is baking-challenged can make this. :thumb:
Apple Betty (also known as Apple Crumble)
~ Ingredients ~
1/2 cup Butter
1/2 cup Brown sugar
1 1/2 cups Flour
1 teaspoon Vanilla
1 bag Apples ; peeled and sliced fairly thin
1/2 cup Brown Sugar ; sprinkle on apples
1 teaspoon Cinnamon ; sprinkle on apples
1 tablespoon Butter ; cut into small pieces
~ Instructions ~
Combine first 4 ingredients (butter, brown sugar, flour and vanilla) until crumbly in texture. Use a pastry cutter to mix the butter in. Line a 9" x 9" pan with the apples, cinnamon, brown sugar and dabs of butter. Cover with crumb mix and pat down gently.
Bake at 350° for 1 - 1 1/2 hours.
This rarely ever leaves the baking dish. As soon as any of us (my family) sees it on my mom's table the spoons come out and we're all digging in. If it makes to after dinner it's impressive. If we use plates to eat it as dessert even more impressive. We usually just put it in the centre of the table and we all dig in. :hehe: :twothumbs:

Isn't it fantastic? I'm glad you liked it! My mom puts extra pats of butter on the apples so it's even worse for you but tastes soooooo good!
And yes, served with vanilla ice cream is wonderful but we rarely ever make it that far (see previous post with recipe) :hehe:
oh that dessert sounds sooooooooooooooooooooooooooooooooooooooo good.
Good thing I've been too darn lazy to bake

I have one that I make for potluck type events or picnics, etc.
PURPLE SALAD:
Large box of black cherry jello mix(reg. cherry will work if cant find black)
Large container of cottage cheese
Large container of cool whip(I think its 12oz)
Can of blueberry pie filling
Bag of mini marshmellows
Put all items in bowl and stir, half a bag of the marshmellows should be enough dont need the whole bag. Then chill for at least an hour before serving.
