Anyone ever make sushi? I only like the vegetarian kind so I'm thinking it might be something I could handle at home. I just worry about getting the rice right. Anyone have any success stories?

I just recently started making it at home because I crave it so often!
The rice makes or breaks the whole thing, you know? Gotta get it sticky!
Here's my recipe I got from a relative and it's worked nicely all 20 times I've used it.
1 Cup Sushi Rice with appropriate amount of water.
1/3 Cup Rice Vinegar
3 Tbsp Sugar
1tsp salt
Cook 1 cup uncooked sushi rice to the appropriate amount of water.
Boil together the vinegar, salt and sugar until salt and sugar are dissolved. Pour over the top of the cooked rice. Fold the rice gently with wooden spoon. Don't go in circles or "mix" because you'll mess the rice up. You want to "fold" the rice with the spoon.
Anyways, this always gives me a good flavor, and sticky rice! It's been the best I've tried thus far.
Also, our local market sells sushi sauces, the the brown sweet ones, the spicy ones, etc or you can find them online - to give you that added flavor and make it feel like your ordered it at the Sushi bar. :)

Thanks for the rice recipe and the tips! We have a lot of Asian specialty markets right near us so I think I am set on sauces. I think I'll have to give this a try.
Do you use fish in yours? I was thinking of trying it for my husband but I am hesitant because I know the freshness of the fish can also make or break your sushi. Maybe I'll make it one Saturday after hitting the market...

I have used fish, and ours is usually frozen and I thaw and cook it. We don't have any fresh fish markets near us. But the ones I've used (salmon and tuna) have tasted good. I also do shrimp and crab meat (I usually do artificial crab).
My favorite roll is the Shrimp Tempura Spicy Philadelphia roll. OMG. Mouthgasm.:hehe:
I love adding cream cheese. It just gives this big burst of flavor. Yum.
