I just made this bean salad yesterday. I'm trying to steer clear of red meat again in hopes of getting a smaller waistline (totally worked for me last time.)
So here it is. There are no measurements since I just threw everything into a bowl.
1 can of black beans, lima beans, chickpeas (garbanzo beans) (drained and rinsed)
1/2 red onion sliced
1/2 red bell pepper diced
1/2 green bell pepper diced
dried Tarragon flakes
Fresh Cilantro chopped
salt/pepper
Olive oil
White balsamic vinegar
Add all ingredients in a bowl and stir. Adjust seasonings to taste
