I'm making an effort to be more diligent about meal planning. Lately I've been slacking and we've had sandwiches and fruit for dinner a couple times a week. Now that my nausea is mostly gone, I'm ready to cook again! :hula:

We live off French's crunchy onion chicken strip! Buy a package of chicken tenders, mush up a big can (or bag, I buy the generic WalMart kind) of french fried onions with 2 tbsp of flour and lots of salt/pepper/garlic powder/whatever spices you like. Bathe the chicken strips in 1 beaten egg mixed with a 1/4 cup of milk then put it in the bag with the onions and shake. Dump it all into a baking pan and cover the chicken with the stray onion bits. then bake it at 400 for 22 minutes. Delicious! I like mine on a salad with honey mustard. Sean dips his in BBQ, Cash & Daisy just eat them straight. Cash eats almost nothing but this is the one meal I can count on him to finish!

My easy meal during the week is breakfast casserole (and there's usually leftovers for breakfast the next day! :hula:).

2- 2 1/2 cups frozen hashbrowns
1/2 cup Frozen pepper strips
12 eggs
Bacon crumbles or diced ham
1/2 cup Cheddar Cheese
Salt & Pepper

Just pour the hash browns into the bottom of a 9x13 pan that has been sprayed. Spread pepper strips on top of hashbrowns. Crack all 12 eggs into a bowl and scramble. Add salt & pepper. Pour eggs over peppers and hash browns. I cook until the center is no longer gooey. It's usually about 45 min at 400*. When it's done I remove from the oven, sprinkle cheese on top and let cool for about 10 min. Cut up and eat with fruit & toast on the side.

Homemade frozen pizza is another good, easy, fast dinner. If you're ambitious make them up ahead of time, wrap in freezer paper and they're ready whenever you need a super fast dinner & don't want take out. I have more. Feel free to msg me.

Pork chops and rice in the crockpot. Just lightly brown pork chops (sometimes I even skip this step) toss them in the crock pot with a can of chicken and rice soup. Cook for about 6 hours on low and serve over rice.

Burgers on the foreman are always an easy thing.

Tacos (I always forget how easy they are to make until I make them)

Spaghetti and meatballs

In the summer sometimes we enjoy a dinner of cheese, grapes, bread, and good wine. :)

This isn't a meal that I would typically make (or eat) but daaamn it sounds goood!!!

We generally do pasta once a week. It's easy, fast, cheap.

Another easy meal is I buy a bag of frozen chicken tenderloins. I find that they are more proportionate to the size my children will actually eat and help me portion control. I can't say enough good about the Grill Mates seasonings/marinades. I buy them all the time. Thaw out my chicken, mix up a marinade, let them sit, and then either grill them or put them in a pan with just enough water to keep them tender and not get dried out. You can bake them in the oven too but it's too hot for us right now.

My favorite flavors are:

Tomato Garlic & Basil
Mexican Fiesta
Montreal Steak
Backyard Brew

Seriously, it will taste like you spent hours preparing and it is so easy. Depending on the flavor, I vary my sides. White rice, potatoes, mexican rice, corn, green beans, salad.

Brinner (breakfast for supper) is a favorite... usually pancakes, scrambled eggs, sausages and fruit.

Thanks everyone! I went shopping this morning and did really well budget wise and also prepped everything for the week. I'd like to make an effort not to do any take out meals for at least 2 weeks. We usually do pizza once a week or salads from Panera (we don't have much around here :hehe:)

I think I have some of your recipes saved from awhile ago! :) the pork is one that we love but I forget to make!





I get stuck in ruts and forget what I know to make. Sounds silly, but when I do things last minute I always do that same old stuff.

The nanny cooks dinner for the kids. Dh and I had hot dogs and mac and cheese last night. Doesn't get much faster than that! Oh, and they were all-natural, grass-fed, etc. etc. hot dogs, so it's not that bad, right? ;)

Have you tried the new Phillidelphia cooking cream yet? They have some awesome and EASY recipes on the package. We like the italian herb flavor. You use boneless skinless chicken breast, dice it and cook it. Boil some fettucinni or other pasta. Steam fresh veggies or use a bag of asian/stir fry veggies. Mix the meat and veggies in a big pot/pan, add the cooking cream. That's it. YUMMY!

I also make a breakfast casserole similar to what Michelle posted but use a can of evaporated milk and half as many eggs. We prefer sausage to bacon.

On the casserole note, the kids love tater tot casserole. Frozen tots (damn Napoleon Dynamite, everytime I say that all I think of is that!!), cream of mushroom soup, milk, ground beef, onions, garlic or garlic salt (we prefer minced garlic), shredded cheese. Preheat oven to 400, put frozen tots in bottom of pan, mix mushroom soup with milk, brown ground beef and onions. I layer it like this: frozen tots, a small amount of shredded cheese, browned beef/onions, more frozen tots and a veggie (usually peas or green beans), then spread mushroom soup mixture on top and a thick layer of shredded cheese to cover. Bake for about 45 minutes. Let stand for 10-15 minutes before serving.

I like to make this hamburger stroganoff recipe from my Betty Crocker cookbook.

Brown 1lb beef, some onions, some garlic. Then add a can of cream of mushroom soup and about a tsp of salt and simmer for 10 min. Then add sour cream. Crap I forgot how much.... I think a cup? Cook it until it's hot. We usually boil up 8 oz of egg noodles and mix it all up. It's REALLY good!
