I thought since a lot of us are often looking for menu ideas that I would post what we're having this week. Feel free to ask me for a recipe or even better, post your menu plan for this week!

*reminder it is not hot here at all so that's why I can justify eating Chili in June. Today's high is 60 degrees. ;)

Saturday - Double decker tacos and Mexican rice
Sunday - Shrimp alfredo and salad
Monday- Cheeseburgers
Tuesday- Chili and cornbread
Wednesday - Lily's French onion chicken tenders and balsamic roasted veggies
Thursday- homemade sausage, meatball, and spinach calzone
Friday- "Brinner" eggs, panakes, bacon

This week is going to be a little messed up because my DH is laid up for a few days and we won't get groceries until later in the week (we usually go on Saturday or Sunday) but here's what I have so far:

Saturday - Homemade pizza
Sunday - Dinner at my mom's (if DH is feeling up to it)
Monday - Tacos
Tuesday - Baked sweet and sour chicken, rice and veggies
Wednesday - Spaghetti, homemade bread (I love my bread machine! :hehe:)

That's all I've got so far but it may change. I try to use up whatever I have in the fridge, buy things that are on special and plan ahead enough that I can get something one week and use the rest of it the next week.

This is last week's menu:

Saturday - Chicken Pot Pie
Sunday - Dinner at my Mom's
Monday - My Mom's mac and cheese, veggies
Tuesday - Beef Stroganoff, homemeade bread, veggies
Wednesday - Spaghetti, homemade bread
Thursday - Beef Stroganoff (leftovers from Tuesday), bread, veggies
Friday - Parmesan chicken strips, breaded zucchini coins, roasted potatoes

We try to have some kid of fruit after dinner every night but it really depends on how the boys are doing. Sometimes they just don't want anything else to eat and I'll let the fruit slide but if they haven't had much through the day I do what I can to get them to eat it.

We're having our crunchy onion chicken tenders on wednesday too! It's one of the 3 things Cash will eat ATM. One warning about them, they reheat horribly, microwaving makes them soggy and oven dries them out, so eat them all the night you make them :)

Sunday: Breakfast for dinner (omelets, sausage, hash browns, waffles)
Monday: Easy chicken enchiladas
Tuesday: Angel hair with shrimp in garlic lemon butter
Wednesday: Crunchy onion chicken fingers & salad
Thursday: Leftover enchiladas and/or pasta
Friday: Frozen pizza
Saturday: Daddy's day (either restaurant or he grills)

Saturday - Sour cream, chicken and cheese wraps, salad.

Sunday - Vegetable lasagna and mashed potatoes, salad.

Monday - Daddy's night: baked fish, veggies, salad and bread. I don't know many details.

Tuesday - Carrot ravioli (homemade ravioli stuffed with boiled carrots and red veggie sauce) and garlic bread, Salad.

Wednesday - Jambalya rice (no meat), Squash and Zuchinni pan seared and rolls, Salad.

Thursday - lemon butter and garlic brocolli, chicken nuggets and baked potato, Salad.

Friday - Grocery day, will probably do frozen vegetable pizza so I don't have to "cook".

Haha I don't plan ahead, I know what we have, and make something with just whatever ingredients is available.

I am thinking about some chicken and dumplings this week though. :hehe:
