Erin(who requested recipe) I got this from a book called Circle Round.

You Need:
1 1/2 t. of olive oil(I used veggie and it was fine)
1 medium red onion, chopped fine
2 garlic cloves, minced
1 carrot, finely chopped or grated
1/2 to 3/4 C of chopped red bell pepper(I just bought one and used the whole thing didnt measure LOL)
6 C broth(your choice)
2 C red lentils or yellow split peas(I couldnt find either so used regular lentils)
1 16-oz can of chopped tomatoes, juice included
1/2 t cumin
1/4 t ground coriander
1 Tblsp fresh lemon juice
Salt and Pepper(to taste)

*I didnt use those exact spices. I used what I had on hand, dried oregano and a mix of rosemary, basil and garlic*

To Cook:
In a large pot, heat the oil and add the onion, garlic, carrot, and red pepper until they are soft. Add all other ingredients except lemon juice and salt/pepper.

Bring to a boil, then reduce to a simmer, skim off any brown foam that rises to surface. Cover and simmer for 1 1/2 hours. Squeeze lemon juice in and then season with salt/pepper to taste.
