Strawberry Rice Pudding

This is good with some cooked fruit like stewed plums or stir in a little strawberry jam or golden syrup. Alternatively add some chopped dried fruits instead like dried apricots or semi-dried mango, which can be cooked together with the rice.


Ingredients

3 1/2 tablespoons Arborio/risotto rice
2 cups milk
1 to 2 tbsp caster sugar
1/2 tsp vanilla extract

Method:

Put the rice, milk and sugar in a heavy bottomed saucepan. Bring to the boil, then reduce the heat, cover with a lid and simmer for 30 – 35 minutes, stirring occasionally.

That sounds exactly like my mom's recipe for rice pudding! She uses regular sugar, not caster sugar, but otherwise it's the same! She puts raisins in it too.

I haven't made it for ages! I picked up some Arborio rice the other day to make some risotto so I might have to whip up some rice pudding this week! Yummmm.......

I'm going to make it for Matt too. I have no idea what caster sugar is :confused:

It's superfine sugar. Apparently you can throw it into the food processor and grind it up but my mom always used regular sugar and it was fine.
