I could really use some ideas! Ironically, I gave my dad & stepmom a crockpot cookbook for Christmas, I should have written some down!

So what are some of your favorite crockpot/slow cooker recipes?

Here's 3 super quick & easy ones that we eat all the time

Beef Stroganoff

Put a pack of beef tips in the crock pot with a packet of McCormick beef stroganoff slow cooker mix and a cup of water. Let it cook all day, then add in a cup of cour cream and serve over buttered egg noodles

Chicken Pot Pie
Put a pound of boneless skinless chicken thighs or breasts in the crock pot with a packet of Lipton onion soup mix & a can of cream of chicken soup. Let it cook until the chicken shreds up easily, then mix in whatever veggies you like (I use a can of mushrooms, a can of white corn & a can of peas n' carrots) and let it cook for 30 more minutes.

Meanwhile use an unroll & bake pie crust, put one into a pie pan and press it down then poke holes in it with a fork. Pour the chicken mix in, put the other pie crust over the top & seal the edged with a fork. Cut the top crust to vent & bake for 45 minutes at 300.

Lazy Chicken & Dumplings
Cook a package of boneless skinless chicken thighs with a can of cream of chicken, a can of cream of mushroom, and half a cup of water. Let it cook all day, stir up the chicken until it's shredded, then about 60 minutes before you want to eat, tear up a 10 pack of Pillsbury type whomp biscuits into bite size pieces, throw them into the pot and stir gently. After about an hour, they should have a dumpling-like consistency and you're ready to eat!

The only recipe I can think of off of the top of my head is Ravioli Lasagna. You put a little spaghetti sauce on the bottom of the crock pot and alternate layers of frozen raviolis sauce and mozzarella cheese. You can usually do 2-3 layers and you cook it on low for about 5 hrs I believe. It's delicious!

My grandma gave me this link. I haven't used it yet, but if it's from your grandma it's got to be good, right?!

I make beef stew and beef stroganoff a lot. I just found a stroganoff recipe recently that I like so we've been eating it a lot. :hehe:

The stew recipe is my mom's and it's actually called 5 Hour Beef Stew and you're supposed to cook it in the oven. It's pretty boring so I spice it up a little and do it in the slow cooker. It's very versatile so you can really do anything you want to it.

Beef Stew

3 cups tomato juice (you can substitute any amount with beef broth or canned tomatoes)
2 tbsp quick cooking tapioca
1 package stewing beef (no idea on the weight, I buy the average sized package)
2 or 3 medium potatoes, chopped
2 or 3 carrots, chopped
2 or 3 stalks celery, chopped
1 onion chopped
Any other veggie you'd like to throw in (I usually add mushrooms, peas and lima beans)
1 or 3 bay leaves
Spices (I add oregano, basil, fresh garlic, maybe paprika depending on my mood)

Add meat and veggies to the crock-pot.

Combine tapioca and spices (except bay leaves) with the tomato juice. Pour over meat and veggies and stir.

Cook on low for 8-10 hours.

Beef Stroganoff

1 1/2 pounds Beef for stew
2 tablespoons Butter or margarine
1 1/2 cups Beef bouillon
2 tablespoons Ketchup
1 small Garlic clove; crushed
1 teaspoon Salt
8 ounces Mushrooms sliced
1 medium Onion chopped
4 tablespoons Flour
1 cup Sour cream
3 cups Hot cooked noodles

Dredge beef in flour and salt. Melt butter or margarine in large skillet and add beef and onion. Cook over medium heat until browned. Place beef bouillon, ketchup, garlic and mushrooms in crock pot and mix. Add cooked beef and onions. Cover and cook on low for 3-4 hours. Add sour cream, cover and cook for 30-45 minutes (do not let mixture boil). Serve over hot cooked noodles.

*Don't laugh a the ketchup. :hehe: I did at first but it really adds a nice zing to the sauce.

This one is so incredibly easy, but the flavor is great and hubby loves it!

Pulled BBQ Pork
*1 pork tenderloin (I buy mine that comes in a 2-pack, it's usually 3 pounds worth of pork)
*1 can of beef broth (or chicken)
*1 bottle of good BBQ sauce (I really like Famous Daves or Jack Daniels Spicy Original)

Put pork in crockpot. Season pork with salt, pepper, garlic powder, and seasoned salt. Pour in beef broth and BBQ sauce. Cook on low for 6-7 hours. Once finished, shred pork and let simmer in sauce for another hour. Serve on buns.

Put pork chops (you can lightly brown the chops first if you like) or chicken in the crock pot. Cover with Campbell's Chicken and Rice soup. Sounds simple but is soooo tasty! I usually serve with with some extra white rice.

Oh I'd die w/out my crockpot. I keep all my recipes in an excel spreadsheet on my computer. Here are some of our favs.

Crock Pot Pulled Pork

Most of this stuff is super easy, especially the pulled pork. For that, you just buy a cheap pork shoulder, put it in your crock pot, and
pour worcestershire sauce over it until it pools a little in the bottom. Then you pat it all over with brown sugar and cook on low for 10
hours. It falls apart all by itself and then you can add barbecue sauce if you want or just eat it as is. It's fantastic, especially considering
the amount of actual work that goes into it.

Shredded Chicken (mexican style, crockpot)

3 boneless skinless chicken breasts
1 can of chicken broth
1 packet taco seasoning.
Put all into the crock pot on low for 6-8 hours.
remove chicken from crockpot and shred.
Put back in crock pot for 1 hour on high.

You can use it to make chicken tacos, salad, etc. It's VERY YUMMY!

Crock Pot Sloppy Joes
From: Weight Watchers (Servings:4 Points:5 +bun)

2t Onion powder
1C Canned Tomato sauce
1/2 C ketchup
1t dry mustard
1/4t table salt
1/8t black pepper
1T Worchestershire Saunce
1T Vinegar
1 LB Uncooked Lean ground beef (I also use 99% fat free ground turkey)
1T Packed brown sugar

Brown meat. Add all ingredients together into crockpot.
Cook on high for 3 hours, or low for 6.

Serve on whole wheat buns.

Mom's BBQ Beef Sammies

Boneless Chuck roast
1 c barbecue sauce
1/2 c apricot preserves
2 Tbsp red or green bell pepper-- chopped
1 Tbsp Dijon mustard
2 tsp brown sugar -- packed
1 small onion -- sliced

Throw it all in the cp on low for 7-8 hours, remove the roast, cut it into slices and then put back into the sauce for 20ish mins on high.

Beef and Chipotle Burritos

1.5 or 2 pounds boneless beef round steak
14.4 oz can petit diced tomatoes
1 small onion, chopped
1-2 canned chipotle peppers in adobo sauce, chopped
1 teaspoon dried oregano, crushed
1/4 tsp ground cumin
1 glove garlic, minced

Put everything above in the crock pot and cook. When it is done cooking, remove the stuff around the meet and shred the meat.

Serve shredded meat on tortillas with shredded cheese and pico de gallo to make tasty burritos! (I make pico de gallo for this recipe but I suppose you could use salsa)

Crock-Pot Chicken 'n' Biscuits

Ingredients:
1 1/2 to 2 pounds boneless chicken breast halves, cut in large chunks
1/2 cup chopped onion (I used 1 small onion)
1 cup chopped celery (I used 3 stalks)
1 can (10 3/4 ounces) condensed cream of chicken or cream of chicken and mushroom soup, undiluted
1 jar (12 ounces) chicken gravy
1/4 teaspoon poultry seasoning
1/2 teaspoon dried leaf thyme
Dash black pepper
2 cups frozen mixed vegetables, thawed (I used approx. 3 cups)
6 frozen biscuits or refrigerator biscuits

Preparation:
In a slow cooker, layer the chunks of uncooked chicken breasts with chopped onion and celery. Combine the soup and gravy with poultry seasoning, thyme, and pepper; pour over the chicken. Cover and cook on LOW for 5 to 6 hours. Add the thawed mixed vegetables, turn the slow cooker to HIGH, and continue cooking for 20 to 30 minutes, until vegetables are tender.
Meanwhile, bake the biscuits as directed on the package. Split a biscuit and spoon some of the chicken and vegetables over the bottom biscuit. Put the top half of the biscuit on the chicken and gravy.

Crock-Pot Taco Bake

1 pound ground beef
1 onion, chopped
3/4 cup water
1 package taco seasoning
30 ounces tomato sauce
8 ounces shell macaroni, uncooked
4 ounces green chilies
2 cups shredded cheddar cheese

Brown beef and onion; drain. Add water, taco seasoning and tomato sauce. Simmer 20 minutes. Transfer to crock pot; stir in macaroni and chilies. Cook on low 6-8 hours, high 3-4 hours. Top with cheese in last 30 minutes.


Crock Pot Maple Ham

INGREDIENTS
7-8 pound bone-in spiral-cut ham
1 cup dark brown sugar
1/2 cup all natural maple syrup
2 cups pineapple juice


Use a 6-7 quart slow cooker. Unwrap the ham, and discard flavor packet. Place it into your stoneware, flat-side down. Rub brown sugar on all sides. Pour on maple syrup and pineapple juice. Cover and cook on low for 6-8 hours. If possible, baste ham with collected juice from the bottom of the crock an hour or so before serving. When cooking is done, remove carefully and let it rest on a cutting board for 15-20 minutes before carving.

BBQ Pulled Pork

3-4lb pork roast
1 teaspoon salt
1 teaspoon ground cumin
1teaspoon paprika
1 teaspoon pepper
1/2 teaspoon red pepper
1 onion thinly sliced
1 bell pepper sliced thin
1 bottle BBQ sauce
1/2 cup brown sugar

Place onion and bell pepper in crock pot, add pork. Combine rest of ingredients and pour over meat. Cook on low 8-10 hours. Pull pork apart and serve over rice with tortillas.

Teriyaki meatballs

1 1/2 lbs ground beef
1 egg
1/2 c bread crumbs
1/2 bottle teriyaki sauce
1/2 - 2 bottle of BBQ sauce
1 shake Adobo sauce

combine all ingredients except bbq sauce in the bottom of the crock pot. Shape mixture into meatballs. Add to crock pot and cook on low for about 4-5 hours.

Moroccan beef stew

Brown 3 lbs stew meat in a little oil and plunk them into the slow cooker (5qt)
Saute one onion and a couple garlic cloves until they're translucent and then add a couple good carrots, chopped into chunks.
A couple minutes later, add 2 Tbs sweet paprika, 1 Tbs cumin, and 1 tsp cinnamon and just let them toast up until they smell really good.
Add one cup of beef broth to the saute pan to deglaze and then pour it all into the slow cooker with the meat.
Into the slow cooker, toss in one can (15oz) of garbanzo beans (drained, rinsed), plus a cup of dried apricots (cut them up a little, I just cut each one in half. They'll plump when you cook 'em) and a half cup of golden raisins.
Pour two more cups of beef broth into it all and cook on low for 8-10 hours.
When it's done, mix 2 Tbs of cornstarch with 1/4 cup of water and stir that in and let it cook for another 30 minutes to thicken it up a little.

Serve over cous cous

Spaghetti Sauce

Brown In Frying Pan:

2 Medium Onions, chopped
2 lb Hamburger (I add a little garlic, salt & pepper to the meat, but this is not in the recipe)

Add to above in crockpot:

4 cloves of garlic (I use the pre-minced stuff in the jar)
2 cans tomatoes, drained and cut up or you can buy the mini diced ones
2 cans tomato sauce (15 oz size)
2 cans tomato paste (6 oz size)
1/2 cup parsley
2 Tablespoons brown sugar
2 teaspoons salt
1 teaspoon Chili Powder
3 teaspoons Dried Crushed Oregano
1/2 teaspoon Crushed Thyme
2 Bay Leaves
1 green bell pepper, cut up (we omit this since dh doesn't like green pepper)
2 cups water (we add less because we like thick sauce. For full recipe probably 1 1/2 cup and for half recipe probably 1/2 to 3/4 cup. Just add the water last and you will be able to gauge with your eyes how thick you want it).

Cook on low all day.

I have another recipe that is even better but it is a considerable more amount of work and it uses the oven... I can post that one too if you want.
