I like cucumbers, with blue cheese and tomatoes in italian dressing :thumb:
Or just cukes on my sandwiches.
Yum.
If you cut the seeds out, you won't get gas :hehe: They do cause gas.:hehe:

I make cucumber salad but not sure if it's a "traditional" cucumber salad but it's what my mom always made.
peel and slice a cucumber or two and ring an onion
place the sliced cucumbers and ringed onions into a glass bowl, sprinkle with salt and cover with saran wrap/a lid and place in the refridgerator overnight.
The next day "wring out" the cucumbers and onions by squeezing them until you can get no more juice out of them. I let them warm up to room temp first or the cold cramps my hands.
Place the wrung out cucumbers and onions into a clean bowl. Empty a small container (8 oz I think) of sour cream then fill the sour cream container with white vinegar and dump it in. Add a tablespoon or two of sugar and taste. May need to add a little more sugar if it's too bitter. This is better if it rests in the refridgerator for a few hours before serving.
BUT, if you have an abundance of veggies you're worried will go to waste you could always donate to the local food shelter.
I love cucumber salad or that cucumber dressing you get with Peanut Satay! Oh you can make Taziki sauce
