What's your recipe for meatloaf? I'm thinking that is what we are having for dinner tonight.
Anyone have anything unusual they put in it?

This is a recipe that my Grandma used to make. Not exactly the healthiest thing out there but it's awesome. I use bread crumbs instead of crushed crackers and I always make a little more sauce than it calls for. Keep in mind the recipe is old and I copied the text word for word. :hehe:

Sweet 'n' Sour Meat Loaf

Serving Size: 8


1 small Onion ; minced
1/4 cup Crackers ; crushed
1 can (8 oz) Tomato sauce
1/4 cup Brown sugar ; packed
1/4 cup White vinegar
1 teaspoon Mustard ; (prepared)
1 Egg
2 lbs Ground beef
1 1/2 teaspoons Salt
1/4 teaspoon Pepper

At your convenience: Prepare minced onion and crushed crackers.

About 1 hour before serving: Start heating oven to 400°F. Mix tomato sauce with sugar, vinegar and mustard until sugar is dissolved. With fork, slightly beat egg; add onion, crackers, ground beef, salt, pepper and ½ cup tomato sauce mixture; combine lightly but thoroughly. In a bowl shape meat into oval loaf; turn into shallow baking dish, keeping loaf shapely. Pour on rest of tomato sauce mixture. Bake 45 mins, basting occasionally. With 2 broad spatulas, lift onto platter. Pass juices after spooning off as much fat as possible.

I'm boring. I just use the recipe on the box of the Lipton's Onion Soup Mix. It is tasty though!

I'm super picky about meatloaf, but I love this recipe, it's the best I've ever had

* 1 egg, lightly beaten
* 1 cup purchased pasta sauce (I used Bertolli garlic & olive oil flavor)
* 1/2 cup fine dry bread crumbs
* 2 tbs dried basil or 1/4 fresh chopped basil leaves ( I used dried from the spice rack)
* 1 lb. lean ground beef
* 1 cup shredded mozzarella cheese (4 oz.)

Preheat oven to 450 degrees F. In large bowl combine egg, 1/2 cup of the pasta sauce, bread crumbs, basil, and 1/4 teaspoon salt. Add beef and 1/2 cup of the cheese; mix well. Divide beef mixture in four equal portions. Shape each portion into an oval. Place on 15x10x1-inch baking pan. Spoon on remaining pasta sauce and sprinkle with remaining cheese. Bake 15 minutes or until internal temperature registers 160 degrees F.

You can also make it a full sized loaf or as meatballs

Bacon . . . I use turkey bacon because it is healthier, but I put a layers at the bottom and at the top. Gives it some different texture, too.

I just make it like a giant burger. We don't eat it often because DH doesn't like it but he'll eat a burger. Weirdo.

I add some brown sugar and ketchup on top though!

Jo, try the recipe I posted. It makes a small loaf (fits in an 8 x 8 pan) and as long as you've got lots of sauce you can easily reheat it in the oven for leftovers (I cover it with tin foil to reheat). It's a big winter favourite of ours although mine doesn't taste nearly as good as my moms. :hehe:

I make it a lot in the winter too.

I have a ton of fresh basil on my windowsill, so maybe I'll make that one!

I know it sounds a little odd because of the ingredients but it's really, really good. :hehe: If you add ketchup and brown sugar to yours you're only a few ingredients away from my Grandma's. I use 1 pound of ground beef (I think it's a pound but I've never weighed it; I use one package from the store) instead of 2 so there's lots of sauce.
